1. How each one actually sets

Plaster of Paris sets through a genuine chemical reaction (with water) that happens quickly — often within 15-30 minutes — and produces a hard, dense, stone-like material once cured. Joint compound (drywall mud) dries primarily through water evaporation, which is a slower process, and remains workable considerably longer before it firms up, then continues drying and shrinking slightly over a longer period.

2. Why plaster's fast, hard set makes it hard to work with for wall finishing

That quick, hard-setting reaction is genuinely useful for molds, casting, and certain quick structural repairs — but it's a real liability for smooth wall finishing work, since it sets too fast to allow the kind of feathering, smoothing, and multiple thin-coat buildup that a clean, invisible drywall seam repair actually needs.
